Small Batch Freeze-Dried Strawberry Powder

Strawberry powder is a key ingredient in recipes like small batch strawberry buttercream. And yes, you can buy it, but it's seriously so easy to make at home with freeze-dried strawberries! Plus, if you make it yourself, it never loses its flavor or color. It'll always be fruity, bright, and fresh!

Can you believe that when I was in pastry school, I used to make strawberry desserts by blending strawberries, straining the purée, and just hoping that the liquid wouldn't make things too liquid-y? Couldn't be me these days!

Nope. Cause once I discovered that you can blend up freeze-dried strawberries for a super concentrated berry flavor that doesn't affect the texture of baked goods? I'm forever changed. Bless it.

You can definitely buy it, but I've noticed that the store-bought stuff goes downhill pretty fast. After a couple of months, it loses some of its flavor and color. So if you need just a little, this small batch recipe is the solution.

I use this powder all the time to make frosting. But you can also add a spoonful to the coating in my small batch sugar cookies, and it's sooo good!

(And yes. I realize this recipe still involves blending and straining lol. But I promise, it's easier!)

Freeze dried strawberries

You only need one ingredient to make this powder, but it has to be this ingredient. Obviously, this recipe will not work with fresh or frozen strawberries haha. Luckily, freeze-dried strawberries are super easy to find these days!

Just look for them in the dried fruit aisle of the grocery store. They're usually near the raisins or snack nuts.

Blender or food processor

Start by placing the freeze-dried strawberries in a food processor or blender. (I've used both, it works great either way!)

Then, blend the berries into a fine powder, about 2 minutes. There will be some chunks, but you want as much powder as possible.

Lastly, sift the powder through a fine-mesh sieve to remove any chunks or seeds. You should end up with about ¼ cup of powder.

Shake the food processor halfway through blending to make sure any chunks on top get blended too!

Using the powder

Even though this powder is amazing for frosting and cookies, you can use it in all kinds of recipes! I also love sprinkling it on top of cupcakes, stirring it into oatmeal, blending it into smoothies, or adding it to chia pudding. Basically, add it anywhere you want a burst of strawberry flavor!

5-Minute Small Batch Strawberry Powder

Making a small batch of freeze-dried strawberry powder couldn't be easier! All you need is freeze-dried strawberries and a food processor or blender. This is a key ingredient in strawberry buttercream, but you can also stir it into oatmeal, chia pudding, or granulated sugar for a pop of berry flavor!

  • Food processor or high-speed blender

Ingredients
  

  • 35 grams freeze-dried strawberries (1.2 ounces)

Instructions
 

  • Pour the freeze-dried strawberries into a food processor or high-speed blender. Blend on high for about 1-2 minutes, shaking the food processor or blender halfway through, until the berries are a fine powder. You will have some seeds and chunks leftover.
  • Sift the powder through a fine-mesh sieve to remove any chunks and seeds, and discard. Use the powder right away or store it in an airtight container for up to 1 week.

Notes

This recipe will make about 50 grams (¼ cup) of powder.
The longer the powder sits in the pantry, the more it will lose its flavor and color. I recommend using it within a week!
