Small Batch Marshmallow Fruity Pebbles Treats

If you're a Rice Krispie treats girl like me, then don't sleep on these small batch marshmallow Fruity Pebbles treats! With a sprinkle of salt, a dash of vanilla, and even more marshmallows, they're extra gooey, decadent, and have that classic fruity flavor that we all know and love. They'll take you straight back to childhood!

Tbh I've probably had Fruity Pebbles like, 3 times in my whole entire life. I was more of a Cap'n Crunch kid anytime my mom let us buy sugary cereal. 🤷‍♀️

But recently I had some cereal milk ice cream made with good ol' FPs and I remembered just how good they are. And then I thought, why not mix them with marshmallows for a similar vibe? Honestly, Rice Krispies walked so Fruity Pebbles could run.

This recipe takes all of my best marshmallow treat tips that I learned in pastry school but makes everything a little more fun with rainbow-studded cereal. I thought that these cinnamon toast crunch treats were my favorite, but these bars are really giving them a run for their money.

Large or mini marshmallows

This recipe works with either large or mini marshmallows. That's the beauty of weighing ingredients - 180 grams of marshmallows is the same no matter the size. 🙂

I will say that if you want some extra gooeyness, mini marshmallows are the way to go so you can add an extra handful or two.

How to make these bars

Start by melting the butter & marshmallows in a skillet.

Add the Kosher salt and vanilla extract.

Then, add the Fruity Pebbles off of the heat.

Quickly toss the marshmallow & cereal.

Then, press the cereal mixture into a loaf pan.

Once the bars are set, cut them into 6-8 squares.

Don't overcook the marshmallow mixture! If it gets too hot, the marshmallow will harden, and you won't get that sticky, airy texture.

My secret for extra gooey bars

If you love a super marshmallow-y bar, add an extra handful or two right before you press the mixture into the loaf pan. The mallows will melt just a tad, and it makes these bars next-level.

Small Batch Fruity Pebbles Rice Crispy Treats

These bars are like the rice crispy treats you know and love, but they're made with crunchy Fruity Pebbles instead! All you need is 5 ingredients and about 20 minutes, and you're on your way to a gooey, sweet, and fruity snack situation. This recipe is beyond easy and makes just 6-8 servings!

Equipment

  • Medium skillet
  • loaf pan
  • Parchment paper

Ingredients
  

  • 35 grams unsalted butter (2 ½ Tablespoons)
  • 180 grams mini marshmallows, more for serving (3 ½ cups)
  • Pinch of Kosher salt
  • 1 teaspoon pure vanilla extract
  • 110 grams Fruity Pebbles cereal (4 cups)

Instructions
 

  • Grease a loaf pan with butter or baking spray. Line the pan with parchment paper and set aside for later.
  • Then, melt the butter over medium-low heat. Add the mini marshmallows and stir constantly, just until they're melted and well-combined with the butter. Stir in the salt and vanilla extract.
  • Remove the pan from the heat and add the Fruity Pebbles cereal. Stir gently, but quickly, until everything is well-combined. Then, fold another 1-2 handfuls of mini marshmallows into the mixture if you want extra gooey bars.
  • Using a greased rubber spatula, gently press the mixture evenly into the prepared loaf pan. Let the bars set at room temperature or in the fridge for 30-60 minutes. Use the parchment paper to remove the treats from the pan. Slice into 6-8 bars and enjoy!

Notes

When it comes to small-batch baking, I always recommend using a scale to measure the ingredients. If you don't have a scale, make sure to measure the ingredients carefully for the best results.
Don't cook the marshmallows over high heat. You just want to cook them until they're melted. If they overcook, your cereal treats will end up hard instead of chewy.
My loaf pan is 3.5''x7.5'' but a 4.5''x8.5'' or 5''x9'' pan will work too. The bars will just be thinner.
If you don't have a loaf pan, you can use a muffin pan instead. Grease 6 cups or line them with cupcake liners and evenly divide the mixture between the cups. Press gently until the tops are smooth.
