Small Batch Fruity Pebbles Rice Crispy Treats

These bars are like the rice crispy treats you know and love, but they're made with crunchy Fruity Pebbles instead! All you need is 5 ingredients and about 20 minutes, and you're on your way to a gooey, sweet, and fruity snack situation. This recipe is beyond easy and makes just 6-8 servings!

Ingredients
  

  • 35 grams unsalted butter (2 ½ Tablespoons)
  • 180 grams mini marshmallows, more for serving (3 ½ cups)
  • Pinch of Kosher salt
  • 1 teaspoon pure vanilla extract
  • 110 grams Fruity Pebbles cereal (4 cups)

Instructions
 

  • Grease a loaf pan with butter or baking spray. Line the pan with parchment paper and set aside for later.
  • Then, melt the butter over medium-low heat. Add the mini marshmallows and stir constantly, just until they're melted and well-combined with the butter. Stir in the salt and vanilla extract.
  • Remove the pan from the heat and add the Fruity Pebbles cereal. Stir gently, but quickly, until everything is well-combined. Then, fold another 1-2 handfuls of mini marshmallows into the mixture if you want extra gooey bars.
  • Using a greased rubber spatula, gently press the mixture evenly into the prepared loaf pan. Let the bars set at room temperature or in the fridge for 30-60 minutes. Use the parchment paper to remove the treats from the pan. Slice into 6-8 bars and enjoy!

Notes

When it comes to small-batch baking, I always recommend using a scale to measure the ingredients. If you don't have a scale, make sure to measure the ingredients carefully for the best results.
Don't cook the marshmallows over high heat. You just want to cook them until they're melted. If they overcook, your cereal treats will end up hard instead of chewy.
My loaf pan is 3.5''x7.5'' but a 4.5''x8.5'' or 5''x9'' pan will work too. The bars will just be thinner.
If you don't have a loaf pan, you can use a muffin pan instead. Grease 6 cups or line them with cupcake liners and evenly divide the mixture between the cups. Press gently until the tops are smooth.
